Okay this one is SUPER easy and it’s a great homemade meal for when you’re wanting something a little “greasy” or “unhealthy” without the grease but with the health!
Ingredients:
Chicken breasts, sliced into tenders.
1-2 eggs
Crackers of choice (I like multigrain rice, seed or Mary’s crackers)
Spices of choice (I like mango chipotle, salt and pepper)
Directions:
Whisk the eggs in a bowl.
Blend the crackers with the spices until they are ground medium-fine and place the crumbs in a bowl.
Dip the chicken slices into the egg and then place the chicken into the crumbs and coat evenly.
Place battered chicken onto a baking sheet and bake until fully cooked (approx 20 mins at 350 degrees F should do the trick, depending on how thick your slices are).
Dip in your favourite sauce and enjoy!
