Chocolate Covered Crunchy Protein Balls
These delicious little things offer a high protein & low sugar snack on the go. Each ball packs ~10g of protein and only about 4g of sugar. You can reduce sugar content further by reducing the amount of dates and chocolate covering.
Ingredients:
1 cup crushed walnuts
1 cup almond butter
1.5 tbsp coconut oil (melted)
2 tsp vanilla extract
1/2 cup coconut flakes (unsweetened)
1/2-1 scoop of protein powder (I use Paleo Protein - chocolate or vanilla are good)
3 tbsp chia seeds
1/2 cup of dates, chopped
1 rice cake, crumbled
1/4 cup dark chocolate chips
Directions:
Mix all ingredients, except for the chocolate chips, together in a bowl. Then melt the dark chocolate/chips with 1 tbsp coconut oil or butter in a pot. Form balls from mixture and lightly cover in melted chocolate. Refrigerate until cooled & Enjoy! I personally like eating these while they are fresh and cold from the fridge.
