Slow Cooker Beef Stew

A hearty, fulfilling beef stew for those colder winter months. 

I loved this hearty beef stew in the slow cooker. It is quite easy to make and delicious! Really warms you up on a cool fall or winter day. Set it & forget it!

Ingredients:

  • 2 lbs cubed Beef - I used sirloin tip, but many cuts including stewing beef, chuck steak and others will work well!

  • 3 Potatoes, diced

  • 3 Carrots, sliced or chopped

  • 1 medium yellow onion, diced

  • ~1.5 cups cremini mushroom, sliced

  • 1 large can (796 ml) fire roasted diced tomatoes (organic if possible)

  • 1 small can (398 ml) tomato sauce (organic if possible)

  • 4-5 celery sticks, sliced

  • 1 cup frozen peas

  • 1 container organic beef broth (946 ml)

  • 2 tsp Worcestershire sauce

  • 1-2 tsp Better Than Bouillon beef (or to taste)

  • 2 tsp garlic salt or 3 cloves fresh garlic, minced (or both!)

  • Salt & Pepper to taste

  • 3 bay leaves

  • 2 sprigs of rosemary

Directions:

  • Add all ingredients to crock pot, except peas

  • Turn on low for 8 hours or high for 4 hours

  • Add in peas during the last 15 mins of cooking

  • Serve and Enjoy!
